Recipe for Pie Filling:
- Peel off the apples and cut into cubes, put them in a bowl and toss with lemon juice.
- Take a pan melt the butter and put all the apples into it. After adding apples, add caster sugar, brown sugar and cinnamon sticks and mix well with spatula.
- Cook for 2 minutes on medium heat to let the sugar dissolve and apples will start to simmer.
- Pour the apples over strainer placed over a large bowl, strain all the juice into bowl.
- Put the apples in the pan again and absorb the leftover juice in them by adding 1 tbsp of cornflour into them and cook on medium heat for around 1 minute.
- Remove the flame and keep aside.
- Now take another pan put the juice that you kept in the bowl into it to make caramel
- Cook this for around 5 minutes until you get a thick consistency.
- Be careful while treating with the caramel as it gets very hot due to the melting sugar contents.
- Put a required medium quantity of caramel over apples in the previous pan and let them cool down to a room temperature before putting into the Pie Crust. Don't put all of the caramel over apples, just a precise quantity is enough.
- After it is at room temperature add the filling into prepared Pie Crust.
- For covering the Pie from top take the other half of dough roll it with the rolling pin and cut vertical strips of medium width from it
- Cover the pie with it in the form showing in picture below.Trim the excess strips coming out of the mold and pinch from the corners.
- Take a bowl mix 1 egg and cream in it to make a smooth texture.
- Brush the lattice thoroughly with egg wash, be gentle with it.
- Put the prepared mixture into oven for around 180 for 45 to 50 minutes
- Your Apple Pie is ready to eat now.
